Raw Vegan Granola Bars

If you’d like a high-energy breakfast, a healthy dessert or a snack to enjoy on the go, then these dehydrated raw granola bars are just the thing!

Ingredients:

1 cup dried fruit (cranberries, raisins, blueberries, etc.)

1 cup raw rolled whole oats (order online) or sprouted oat groats

1 cup whole hulled seeds (pumpkin, hemp, sunflower, sesame)

1 cup unsweetened shredded dried coconut

2 tbsp. ground flax seeds

3 tbsp. raw almonds

1 tbsp. cold-pressed coconut oil or raw coconut butter

1 tbsp. water

1/2 tsp. sea salt

1 tbsp. raw agave syrup or date syrup (date blended in water)

Instructions:

  1. Place all ingredients in a food processor and chop coarsely.

  2. Turn out onto a mesh dehydrator tray and spread evenly into a square around 1/2 inch thick.

  3. Use a blunt knife to gently separate the mixture into bars of your desired size.

  4. Dehydrate at 115 degrees F for 4-6 hours until the exterior is dry and they hold together.

  5. Serve fresh, or refrigerate in a container to store. Wrap to take with you.
