Raw Vegan Brownies

These delicious brownies are chewy, rich and very nutritious! A great raw vegan recipe to satisfy your cravings for sweets.

Brownie Ingredients:

½ cup pitted and soaked Medjool dates

¼ cup almonds

¼ cup walnuts

3 tbsp raw cacao or carob powder

1 tbsp raw chia seed (optional)

pinch of Himalayan pink or sea salt

Frosting Ingredients:

1 tbsp raw coconut butter

1 tbsp raw cacao or carob powder

1 tbsp raw date syrup (dates blended in water)

¼ tsp dried and powdered vanilla bean

Instructions:

  1. In a food processor add the nuts, raw cacao powder, chia seeds and salt. Blend well until it forms a powder.

  2. Add dates and blend it again until it turns into a ball. If too dry, add more dates. If too sticky, add more nuts.

  3. Place the mixture on parchment paper or in a pan and press it into a square shape roughly 1/2" thick.

  4. Press in chopped almonds or walnuts (optional).

  5. For the frosting, combine the coconut butter, raw cacao powder, date syrup and powdered vanilla bean. Leave in the refrigerator for a few minutes to thicken.

  6. Spread the frosting on the raw brownie base and garnish with chopped walnuts.

  7. Cut into squares and refrigerate.
