Raw Vegan Cauliflower Soup
This tasty raw vegan soup features cauliflower in a creamy sauce made with macadamia nuts, lemon juice, cold pressed olive oil, fresh garlic and seasonings. Garnish with chives and serve with dehydrated crackers.
Ingredients:
1 cup cauliflower florets
2 tbsp raw macadamia nuts
1 tbsp cold pressed olive oil
1 tsp fresh lemon juice
2 cloves fresh garlic
1/2 cup water
Himalayan pink or Celtic sea salt and ground black pepper to taste.
Optional: Dehydrated crackers
1 tsp chopped chives as garnish
Instructions:
Combine all ingredients except for garnish in blender, and blend until smooth.
Pour into serving bowl, then add chives as garnish and serve with dehydrated crackers.
Keep refrigerated until ready to eat.
