These easy to prepare cucumber avocado spirals make a great appetizer for a special meal or a fun treat to take to a raw vegan potluck. Also works as a nice snack between meals.
1 raw cucumber, cut into long thin strips lengthwise
1 ripe avocado
Juice of ½ a lemon
Lay strips of cucumber down on a clean flat surface.
Remove flesh of the avocado, add salt and lemon, and mash with a fork until it forms a paste.
Using a flat knife spread the avocado evenly on the cucumber slices.
Roll each slice up around the avocado filling, and place on a serving plate.
Sprinkle with paprika and serve fresh!
