Raw Vegan Carob or Chocolate Donuts
This raw vegan recipe features yummy raw carob or chocolate donuts! This naturally sweet and fully raw treat is healthy, nutritionally dense and rich in antioxidants.
Ingredients for Several Raw Donuts:
Donut:
1/4 cup raw almonds 1/4 cup raw pecans 1/2 cup dehydrated unsweetened coconut shreds 1/4 cup sprouted whole buckwheat 1/4 cup raw carob powder or raw chocolate powder (you may have to order this online) Dash of sea salt 1 cup soaked Medjool dates (use soaking water below)
Carob or Chocolate Almond Butter Glaze:
3 tbsp raw smooth almond butter 1 tbsp raw carob powder or raw chocolate powder (you may have to order this online) 2 tbsp date soaking water
Optional Toppings:
Raw cacao nibs, chopped raw nuts or shredded coconut
Instructions:
For the donuts, blend or food process the almonds, pecans, coconut shreds, sprouted buckwheat, salt, and raw carob or cacao powder until finely ground.
Add in dates and pulse until dough forms.
Remove from blender and shape into donuts or roll in your palms to make donut holes.
Set aside to dry out or dehydrate at less than 117 degrees F for an hour or so to firm up the exterior of your donuts.
For the glaze, mix together the almond butter, raw carob or cacao powder, and date soaking water to form a smooth paste.
Spread glaze on top of doughnuts or dip them in it.
Top with sprinkles of raw nuts or shredded coconut.
Set the donuts in the fridge to firm up or eat them right away.
