Raw Vegan Asparagus Salad Recipe
Asparagus has numerous health benefits and is often overlooked by raw foodists despite the fact that it can easily be enjoyed raw in a marinated salad. Here are some of the nutritional benefits of this delightful vegetable:
Good Source of Vitamin K.
Contains Anti-inflammatory and Antioxidant Properties.
Serves as a Natural Diuretic.
Nourishes the Digestive Tract.
Good Source of Fiber.
High in Vitamin B1 Thiamine.
Helps Fight Cancer. One delightful way to enjoy asparagus is in a shaved salad marinated in a nutty lemon juice dressing like this.
Here’s the recipe:
Ingredients:
2 pounds large asparagus
1 cup coarsely grated raw almond crumbs
3 tablespoons fresh lemon juice
2 tablespoons warm water
1/4 cup extra-virgin olive oil
Pink Himalayan or Sea salt and
Freshly ground pepper
Instructions:
Cut tops off the asparagus spears and set aside.
Using a vegetable peeler, shave the remaining asparagus stems into long, thin strips and transfer to a large bowl.
In a small bowl, mix the almond crumbs with the lemon juice, water and olive oil to form a dressing.
Add almond dressing to the shaved asparagus and the asparagus tops, and toss to coat.
Season the asparagus salad with salt and pepper to taste.
Serve fresh.
