Raw Vegan Asparagus Salad Recipe


Asparagus has numerous health benefits and is often overlooked by raw foodists despite the fact that it can easily be enjoyed raw in a marinated salad. Here are some of the nutritional benefits of this delightful vegetable:

  • Good Source of Vitamin K.

  • Contains Anti-inflammatory and Antioxidant Properties.

  • Serves as a Natural Diuretic.

  • Nourishes the Digestive Tract.

  • Good Source of Fiber.

  • High in Vitamin B1 Thiamine.

  • Helps Fight Cancer. One delightful way to enjoy asparagus is in a shaved salad marinated in a nutty lemon juice dressing like this.

Here’s the recipe:

Ingredients:

  • 2 pounds large asparagus

  • 1 cup coarsely grated raw almond crumbs

  • 3 tablespoons fresh lemon juice

  • 2 tablespoons warm water

  • 1/4 cup extra-virgin olive oil

  • Pink Himalayan or Sea salt and

  • Freshly ground pepper

Instructions:

  1. Cut tops off the asparagus spears and set aside.

  2. Using a vegetable peeler, shave the remaining asparagus stems into long, thin strips and transfer to a large bowl.

  3. In a small bowl, mix the almond crumbs with the lemon juice, water and olive oil to form a dressing.

  4. Add almond dressing to the shaved asparagus and the asparagus tops, and toss to coat.

  5. Season the asparagus salad with salt and pepper to taste.

  6. Serve fresh.
