Apple, Pecan and Cranberry Salad

Apple, pecans, cranberries, broccoli and carrots come together to make an amazing salad with delicious flavors and textures. The delightful vegan mayo dressing on top makes this raw vegan salad absolutely incredible!


Salad Ingredients:

4 cups fresh broccoli florets, (about 2 medium heads)

½ cup shredded carrots

¼ cup diced red onion

2 large apples, finely chopped

½ cup pecans, coarsely chopped

½ cup sun-dried cranberries

Dressing ingredients:

½ cup raw macadamia or cashew nuts *

½ cup young coconut cream

2.5 tablespoons lemon juice

1 Medjool date

¼ teaspoon Himalayan pink or sea salt

⅛ teaspoon black pepper



  1. In a large bowl combine broccoli, carrots, red onion, apples, pecans, and dried cranberries.

  2. Blend dressing ingredients together in a blender.  Add to the salad and toss to coat.

  3. Chill until ready to serve.

    Enjoy! :)


* Store bought cashews are generally roasted or steamed and only rarely raw, so you may need to purchase these online from a specialty raw food supplier.
